Coconut Lemon Puff Pastry Pie
Ingredients
- 1 cup freshly grated coconut
- 1 cup sugar
- 3 eggs
- Juice and grated rind of 1/2 lemon
- 1/2 cup cream
- 1/2 cup butter
- 1/2 cup coconut milk
- 1 sheet puff pastry
Method
- 1 Beat butter and sugar until creamy.
- 2 Add coconut, lemon juice and rind, cream, and egg yolks beaten light.
- 3 Fold in egg whites beaten to stiff peaks.
- 4 Line a pie dish with puff pastry and pour in the mixture.
- 5 Bake in a moderate oven (350°F) for 45 minutes.
