  • 1 cup freshly grated coconut
  • 1 cup sugar
  • 3 eggs
  • Juice and grated rind of 1/2 lemon
  • 1/2 cup cream
  • 1/2 cup butter
  • 1/2 cup coconut milk
  • 1 sheet puff pastry

Method

  1. 1 Beat butter and sugar until creamy.
  2. 2 Add coconut, lemon juice and rind, cream, and egg yolks beaten light.
  3. 3 Fold in egg whites beaten to stiff peaks.
  4. 4 Line a pie dish with puff pastry and pour in the mixture.
  5. 5 Bake in a moderate oven (350°F) for 45 minutes.
