Coconut Lemon Loaf Cake

Ingredients

  • 1½ cups flour
  • 7/8 cup sugar
  • 2 teaspoons baking powder
  • 2 tablespoons shortening
  • 1 egg
  • ½ cup milk
  • 1 teaspoon lemon extract
  • ½ cup fresh grated coconut

Method

  1. 1 Sift flour, sugar, and baking powder into a bowl.
  2. 2 Add melted shortening and beaten egg to milk, then pour into dry ingredients.
  3. 3 Mix well, then stir in lemon extract and grated coconut.
  4. 4 Pour into a greased loaf pan and bake at 350°F for 35 to 45 minutes.
  5. 5 Sprinkle with powdered sugar or ice with white icing topped with coconut before serving.
