Coconut Lemon Loaf Cake
Ingredients
- 1½ cups flour
- 7/8 cup sugar
- 2 teaspoons baking powder
- 2 tablespoons shortening
- 1 egg
- ½ cup milk
- 1 teaspoon lemon extract
- ½ cup fresh grated coconut
Method
- 1 Sift flour, sugar, and baking powder into a bowl.
- 2 Add melted shortening and beaten egg to milk, then pour into dry ingredients.
- 3 Mix well, then stir in lemon extract and grated coconut.
- 4 Pour into a greased loaf pan and bake at 350°F for 35 to 45 minutes.
- 5 Sprinkle with powdered sugar or ice with white icing topped with coconut before serving.
