Coconut Lemon Drop Cookies
Ingredients
- ¼ cup shortening
- ½ cup sugar
- 1 egg
- ½ teaspoon lemon juice or extract
- ½ cup milk
- 1½ cups flour
- 3 teaspoons baking powder
- 1/8 teaspoon salt
- 2 cups fresh grated coconut
Method
- 1 Cream shortening, then add sugar, beaten egg, and lemon juice.
- 2 Mix in milk slowly. Sift together flour, baking powder, and salt, then add to the mixture along with the coconut.
- 3 Drop by small spoonfuls onto a greased baking sheet, leaving space for spreading.
- 4 Bake in a moderate oven (350°F) for 15 to 20 minutes.
