Coconut Drop Cookies
Ingredients
- 1 lb fine wholemeal flour
- 6 oz desiccated coconut
- 3 oz butter
- 3 eggs
- Cold milk
- 6 oz castor sugar
Method
- 1 Rub the butter into the flour until the mixture resembles breadcrumbs.
- 2 Add the sugar, coconut, and well-beaten eggs to the flour mixture.
- 3 Mix thoroughly, adding just enough cold milk to make the mixture hold together.
- 4 Place small lumps of the mixture onto a floured baking sheet.
- 5 Bake in a quick oven (425°F) until golden brown.
