Coconut Drop Cookies

Ingredients

  • 1 lb fine wholemeal flour
  • 6 oz desiccated coconut
  • 3 oz butter
  • 3 eggs
  • Cold milk
  • 6 oz castor sugar

Method

  1. 1 Rub the butter into the flour until the mixture resembles breadcrumbs.
  2. 2 Add the sugar, coconut, and well-beaten eggs to the flour mixture.
  3. 3 Mix thoroughly, adding just enough cold milk to make the mixture hold together.
  4. 4 Place small lumps of the mixture onto a floured baking sheet.
  5. 5 Bake in a quick oven (425°F) until golden brown.
