Coconut Date Squares
Ingredients
- 1 cup shredded coconut
- 1/2 cup chopped dates
- 1/2 cup corn syrup
- 1/8 teaspoon vanilla extract
Method
- 1 Mix the corn syrup and vanilla extract together in a bowl.
- 2 Add the mixture to the chopped dates and shredded coconut, stirring until it forms a stiff, cohesive dough.
- 3 Press the mixture into a neat square loaf at least one inch thick.
- 4 Refrigerate for one hour to firm up.
- 5 Cut into squares and roll each piece in cornstarch to prevent sticking.
