Coconut Custard Pie

Ingredients

  • 1 pie crust
  • 1/2 cup dried coconut
  • 3 large eggs
  • 3 oz granulated sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 cup milk

Method

  1. 1 Preheat oven to 350°F. Line a deep pie plate with pie crust and build a rim.
  2. 2 Spread 1/2 cup dried coconut evenly into the bottom of the crust.
  3. 3 Beat 3 eggs and 3 oz sugar until combined. Stir in vanilla, salt, and 1 cup milk.
  4. 4 Pour custard over coconut. Bake at 350°F for 30-35 minutes until set.
