Coconut Cake

Ingredients

  • 1 cup butter
  • 1 cup sweet milk
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1 cup shredded coconut
  • 3 cups sugar
  • 4½ cups flour
  • 4 eggs, beaten separately

Method

  1. 1 Preheat oven to 350°F. Cream butter and sugar until light and fluffy.
  2. 2 Add beaten eggs one at a time, mixing well after each addition.
  3. 3 In a separate bowl, whisk together flour, baking soda, and cream of tartar.
  4. 4 Alternately add dry ingredients and milk to the butter mixture, beginning and ending with flour.
  5. 5 Fold in shredded coconut. Pour into prepared pans and bake until done.
