Coconut Cake With Boiled Frosting

Ingredients

  • 1/2 cup butter
  • 2 cups sugar
  • 5 egg yolks
  • 1 tsp vanilla extract
  • 1 cup milk
  • 4 cups flour
  • 1 tsp baking soda
  • 2 tsp cream of tartar
  • 5 egg whites
  • 1 cup shredded coconut
  • Boiled frosting

Method

  1. 1 Cream 1/2 cup butter with 2 cups sugar.
  2. 2 Add beaten yolks of 5 eggs, 1 tsp vanilla, 1 cup milk, and 4 cups flour sifted with 1 tsp baking soda and 2 tsp cream of tartar.
  3. 3 Fold in stiffly beaten egg whites and 1 cup shredded coconut soaked in milk.
  4. 4 Bake in a moderate oven (350°F).
  5. 5 Spread with boiled frosting and sprinkle thickly with grated coconut.
