Coconut Bread Pudding
Ingredients
- 1/2 lb bread
- 3 eggs
- 1 pint milk
- 1 grated fresh coconut
- Coconut milk
- Sugar to taste
- Butter for greasing dish
- Butter for topping
Method
- 1 Soak the bread in the milk until soft.
- 2 Beat in the eggs, grated coconut, coconut milk, and sugar.
- 3 Pour the mixture into a buttered pie dish.
- 4 Dot the top with small pieces of butter.
- 5 Bake in a moderate oven (350°F) until set and golden.
