Cocoa Powder Meringue Cookies
Ingredients
- 1 packet albumen
- 3 tsp cold water
- ½ lb finely sifted sugar
- 2 tsp cocoa powder
- 6 drops vanilla extract
- Sugar for dusting
Method
- 1 Whisk the albumen with cold water until it forms a very stiff froth.
- 2 Mix in the sifted sugar, cocoa powder, and vanilla extract until combined.
- 3 Thickly dust a baking sheet with sugar.
- 4 Drop small teaspoonfuls of the mixture onto the sheet, spacing them apart to allow for spreading.
- 5 Bake in a moderate oven (350°F) for 10 minutes.
