  • 3 tsp cold water
  • ½ lb finely sifted sugar
  • 2 tsp cocoa powder
  • 6 drops vanilla extract
  • Sugar for dusting

Method

  1. 1 Whisk the albumen with cold water until it forms a very stiff froth.
  2. 2 Mix in the sifted sugar, cocoa powder, and vanilla extract until combined.
  3. 3 Thickly dust a baking sheet with sugar.
  4. 4 Drop small teaspoonfuls of the mixture onto the sheet, spacing them apart to allow for spreading.
  5. 5 Bake in a moderate oven (350°F) for 10 minutes.
