Cocoa Ice Cream

Ingredients

  • 1/2 lb cocoa powder
  • 3 cups sugar
  • 2 cups boiling water
  • 3 1/2 quarts milk
  • 1 cinnamon stick
  • 2 large egg whites
  • 1 cup sugar
  • 1 pint heavy cream
  • Vanilla extract

Method

  1. 1 Mix cocoa and 3 cups sugar. Stir in boiling water until smooth.
  2. 2 Scald milk with cinnamon stick. Add cocoa mixture and cook 10 minutes.
  3. 3 Beat egg whites with 1 cup sugar. Fold in whipped cream and vanilla.
  4. 4 Cool mixture completely, then freeze according to your ice cream maker's instructions.
  5. 5 Serve in cups, garnished with additional whipped cream.
