Cocoa Ice Cream
Ingredients
- 1/2 lb cocoa powder
- 3 cups sugar
- 2 cups boiling water
- 3 1/2 quarts milk
- 1 cinnamon stick
- 2 large egg whites
- 1 cup sugar
- 1 pint heavy cream
- Vanilla extract
Method
- 1 Mix cocoa and 3 cups sugar. Stir in boiling water until smooth.
- 2 Scald milk with cinnamon stick. Add cocoa mixture and cook 10 minutes.
- 3 Beat egg whites with 1 cup sugar. Fold in whipped cream and vanilla.
- 4 Cool mixture completely, then freeze according to your ice cream maker's instructions.
- 5 Serve in cups, garnished with additional whipped cream.
