Clear Chicken Broth
Ingredients
- 1 chicken, cut up
- 1 small onion, sliced
- 1 stalk celery, cut fine
- 1 small bunch parsley
- Salt and pepper to taste
Method
- 1 Place the cut-up chicken in a pot and cover with cold water. Add the sliced onion, celery, and parsley.
- 2 Simmer the mixture until the meat falls off the bones.
- 3 Strain the broth through cheesecloth, then cool it and skim off any fat.
- 4 Reheat the broth, season with salt and pepper, and serve in cups.
