Clear Chicken Broth

Ingredients

  • 1 chicken, cut up
  • 1 small onion, sliced
  • 1 stalk celery, cut fine
  • 1 small bunch parsley
  • Salt and pepper to taste

Method

  1. 1 Place the cut-up chicken in a pot and cover with cold water. Add the sliced onion, celery, and parsley.
  2. 2 Simmer the mixture until the meat falls off the bones.
  3. 3 Strain the broth through cheesecloth, then cool it and skim off any fat.
  4. 4 Reheat the broth, season with salt and pepper, and serve in cups.
