Clear Celery And Vermicelli Soup

Ingredients

  • 1 large head celery (or 2 small)
  • 1 large Spanish onion
  • 2 oz butter
  • pepper and salt to taste
  • 1 blade mace
  • 4 pints water
  • 1 oz vermicelli, sago, or Italian paste
  • sippets of Allinson wholemeal toast

Method

  1. 1 Chop onion and fry brown in butter in a saucepan.
  2. 2 Add water, celery pieces, mace, pepper, and salt. Cook until celery is soft.
  3. 3 Drain liquid from vegetables, returning liquid to the saucepan.
  4. 4 Boil soup, add vermicelli or sago, and cook until soft. Serve with toast sippets.
