Clear Celery And Vermicelli Soup
Ingredients
- 1 large head celery (or 2 small)
- 1 large Spanish onion
- 2 oz butter
- pepper and salt to taste
- 1 blade mace
- 4 pints water
- 1 oz vermicelli, sago, or Italian paste
- sippets of Allinson wholemeal toast
Method
- 1 Chop onion and fry brown in butter in a saucepan.
- 2 Add water, celery pieces, mace, pepper, and salt. Cook until celery is soft.
- 3 Drain liquid from vegetables, returning liquid to the saucepan.
- 4 Boil soup, add vermicelli or sago, and cook until soft. Serve with toast sippets.
