Classic Rolled Omelet

Ingredients

  • 2 eggs
  • 2 tbsp cold water
  • 1 tbsp melted butter
  • Salt and pepper to taste

Method

  1. 1 Break eggs into a bowl and add cold water equal to the number of eggs. Beat well and season with salt and pepper.
  2. 2 Heat a thin, smooth frying pan with melted butter over medium heat.
  3. 3 Pour in the egg mixture. Use a thin knife to lift cooked edges, letting uncooked egg flow underneath. Gently rock the pan.
  4. 4 When the omelet is creamy and set, roll it up from the handle side. Add a little more butter if needed for browning.
