Classic Puff Pastry

Ingredients

  • 1 lb butter
  • 1 ¼ lb sifted flour
  • cold water

Method

  1. 1 Wash 1 lb butter in cold water, squeeze dry, and divide into 8 equal parts.
  2. 2 Mix 1 part butter with flour, adding just enough water to moisten. Roll out.
  3. 3 Spread a second portion of butter on the dough, flour it, fold, and roll out again.
  4. 4 Repeat folding and rolling, adding one butter portion each time until all 8 are used.
  5. 5 Chill the paste in a cold place for several hours or overnight.
  6. 6 Roll out once more before using. Work quickly to keep the butter cold.
