Classic Puff Pastry Dough
Ingredients
- 1 pound Vienna flour
- 6 ounces butter
- 1 egg
- ¾ cup cold water
- 1 teaspoon lemon juice
Method
- 1 Place flour on a paste board and roll butter into it.
- 2 Divide butter into two equal parts; place one half on one side.
- 3 Chop the other half into the flour, then make a hole in the center.
- 4 Add lemon juice, whole egg, and cold water to the center; mix well.
- 5 Refrigerate the dough for 15 minutes in a cool place.
- 6 Roll dough to half-inch thickness, place remaining butter in center.
- 7 Fold two sides of paste over the butter and roll out again.
- 8 Repeat the rolling and folding process five times total.
- 9 Allow a 10-minute rest interval between each rolling step.
- 10 Wrap dough and refrigerate for at least 2 hours before using.
