Classic Hollandaise Sauce
Ingredients
- 1/2 cup butter
- 2 egg yolks
- Salt and cayenne pepper to taste
- 1/2 cup boiling water
- Lemon juice to taste
Method
- 1 Rub butter to a cream in a bowl.
- 2 Add egg yolks one at a time, mixing well.
- 3 Season with salt and cayenne pepper.
- 4 Place mixture in a double boiler and add boiling water.
- 5 Thicken the sauce, stirring constantly.
- 6 Remove from heat and stir in lemon juice.
