Classic Hollandaise Sauce

Ingredients

  • 1/2 cup butter
  • 2 egg yolks
  • Salt and cayenne pepper to taste
  • 1/2 cup boiling water
  • Lemon juice to taste

Method

  1. 1 Rub butter to a cream in a bowl.
  2. 2 Add egg yolks one at a time, mixing well.
  3. 3 Season with salt and cayenne pepper.
  4. 4 Place mixture in a double boiler and add boiling water.
  5. 5 Thicken the sauce, stirring constantly.
  6. 6 Remove from heat and stir in lemon juice.
