Classic Baking Powder Scones

Ingredients

  • 1 lb all-purpose flour
  • 2 oz granulated sugar
  • 3 oz unsalted butter, cold and cubed
  • 1/2 pint whole milk
  • 2 tsp baking powder
  • 1 tsp milk or egg white for glaze

Method

  1. 1 Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. 2 In a large bowl, rub the cold butter into the flour until the mixture resembles coarse crumbs.
  3. 3 Stir in the sugar and baking powder. Make a well in the center and pour in the milk.
  4. 4 Mix lightly with a fork until the dough just comes together. Do not overwork.
  5. 5 Divide the dough into two equal pieces. Roll each into a ball, then flatten to 3/4-inch thickness.
  6. 6 Cut each piece into triangles. Place on the baking sheet and bake for 20 minutes until golden.
  7. 7 Brush the hot scones with milk or egg white immediately after removing from the oven.
