Clarified Sugar Quince Jelly
Ingredients
- 2 lbs quinces, peeled, cored, and cut into small pieces
- 1 cup water
- 1 lb sugar, clarified
- ½ cup water
Method
- 1 Place quinces and 1 cup water in a saucepan. Boil until fruit is tender.
- 2 Add clarified sugar and ½ cup water. Boil until fruit falls to the bottom.
- 3 Strain the liquid through a clean linen cloth into a clean bowl.
- 4 Return liquid to saucepan and boil until it sets into a jelly.
- 5 Test readiness by rolling a spoonful on the back of a spoon. Pour into molds and boxes to set.
