Claret Wine Barberry Preserve
Ingredients
- Barberries (fresh)
- Claret wine
- Sugar
Method
- 1 Pick clean barberries from their branches and wash them thoroughly.
- 2 Dry the barberries on a clean cloth.
- 3 Boil a portion of the barberries in claret wine until very soft.
- 4 Strain the mixture and rub it through a sieve to extract the pulp.
- 5 Boil the strained pulp with sugar until the mixture is thick and sweet.
- 6 Allow the syrup to cool completely.
- 7 Place the whole barberries in jars or glasses and fill with the cold syrup.
