Claret Wine Barberry Preserve

Ingredients

  • Barberries (fresh)
  • Claret wine
  • Sugar

Method

  1. 1 Pick clean barberries from their branches and wash them thoroughly.
  2. 2 Dry the barberries on a clean cloth.
  3. 3 Boil a portion of the barberries in claret wine until very soft.
  4. 4 Strain the mixture and rub it through a sieve to extract the pulp.
  5. 5 Boil the strained pulp with sugar until the mixture is thick and sweet.
  6. 6 Allow the syrup to cool completely.
  7. 7 Place the whole barberries in jars or glasses and fill with the cold syrup.
