- claret wine
- gravy
- strong broth
- nutmeg, sliced

- minced onions, fried
Method
- 1 Soak the beef cheeks well, then spit and half-roast them.
- 2 Save the roasting gravy.
- 3 Place the cheeks in a pot with the saved gravy, claret wine, strong broth, sliced nutmeg, ginger, pepper, salt, and fried minced onions.
- 4 Stew on a soft fire for two hours until tender.
- 5 Serve on toasted bread slices.
