Clared Duck With Orange Sauce

Ingredients

  • duck giblets
  • duck meat (from carcass)
  • claret (red wine)
  • stock
  • salt
  • pepper
  • 3 shallots
  • orange juice

Method

  1. 1 Stew duck giblets, meat, and bones in equal parts claret and stock with salt, pepper, and 3 shallots.
  2. 2 Reduce and simmer the mixture until thick, then strain through a sieve. Remove from heat before boiling.
  3. 3 Cut the duck into neat pieces and return them to the pan with the strained gravy.
  4. 4 Squeeze strained orange juice over the dish and serve.
