Clared Duck With Orange Sauce
Ingredients
- duck giblets
- duck meat (from carcass)
- claret (red wine)
- stock
- salt
- pepper
- 3 shallots
- orange juice
Method
- 1 Stew duck giblets, meat, and bones in equal parts claret and stock with salt, pepper, and 3 shallots.
- 2 Reduce and simmer the mixture until thick, then strain through a sieve. Remove from heat before boiling.
- 3 Cut the duck into neat pieces and return them to the pan with the strained gravy.
- 4 Squeeze strained orange juice over the dish and serve.
