Clam Fritters
Ingredients
- 1½ cups flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon paprika
- ½ cup milk or clam juice
- 2 eggs
- 1½ teaspoons grated onion
- 1 teaspoon shortening
- 10 clams
Method
- 1 Sift together flour, baking powder, salt, pepper, and paprika.
- 2 Add milk or clam juice, well-beaten eggs, grated onion, and melted shortening to the dry ingredients; mix well.
- 3 Rinse clams, chop them, and fold into the batter.
- 4 Fry spoonfuls of batter on a hot greased griddle or in deep hot fat until golden brown.
