Ingredients

  • 1½ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika
  • ½ cup milk or clam juice
  • 2 eggs
  • 1½ teaspoons grated onion
  • 1 teaspoon shortening
  • 10 clams

Method

  1. 1 Sift together flour, baking powder, salt, pepper, and paprika.
  2. 2 Add milk or clam juice, well-beaten eggs, grated onion, and melted shortening to the dry ingredients; mix well.
  3. 3 Rinse clams, chop them, and fold into the batter.
  4. 4 Fry spoonfuls of batter on a hot greased griddle or in deep hot fat until golden brown.
