Clam Chowder With Potatoes And Crackers
Ingredients
- 1 cup water
- 1 quart clams
- 1 small onion
- 1 cup sliced potatoes
- 1/2 cup stewed tomatoes
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1 1/2 cups milk
- 2 tablespoons butter
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- crackers for serving
Method
- 1 Add water to clams and pick over carefully to remove shells. Strain liquid through cheesecloth.
- 2 Scald clams in the strained liquid, then remove clams and set aside.
- 3 Cook onion, potatoes, carrots, and celery in the clam liquid until soft.
- 4 Add milk, butter, salt, and pepper to the vegetables. Return clams to the pot.
- 5 Heat thoroughly and serve over crackers.
