Clam Chowder With Potatoes And Crackers

Ingredients

  • 1 cup water
  • 1 quart clams
  • 1 small onion
  • 1 cup sliced potatoes
  • 1/2 cup stewed tomatoes
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1 1/2 cups milk
  • 2 tablespoons butter
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • crackers for serving

Method

  1. 1 Add water to clams and pick over carefully to remove shells. Strain liquid through cheesecloth.
  2. 2 Scald clams in the strained liquid, then remove clams and set aside.
  3. 3 Cook onion, potatoes, carrots, and celery in the clam liquid until soft.
  4. 4 Add milk, butter, salt, and pepper to the vegetables. Return clams to the pot.
  5. 5 Heat thoroughly and serve over crackers.
