Clam And Potato Pot Pie
Ingredients
- small soft-shell clams
- cold boiled potatoes, cut into small cubes
- pie crust
- salt and pepper
- butter, cut into bits
- flour
- clam liquor
- water
Method
- 1 Place clams in a saucepan with their own liquor and bring to a boil.
- 2 Line a pudding dish with pie crust, placing a tea cup in the center to support the top crust.
- 3 Layer clams, cubed potatoes, salt, pepper, and butter bits in the dish.
- 4 Dredge with flour, then add clam liquor and a little water if necessary.
- 5 Top with crust, cut slits for steam, and bake for 45 minutes.
