Clam And Potato Pie
Ingredients
- clams, chopped
- clam liquor
- pastry (for top crust only)
- salt
- pepper
- onion juice
- butter
- strained tomato sauce
- boiled potatoes, sliced
- flour
Method
- 1 Chop clams if large and save the liquor. Heat, strain, and season the liquor.
- 2 Cook chopped clams in the seasoned liquor for 10 minutes.
- 3 Line a bake dish with a thick top crust of pastry, leaving the bottom open.
- 4 Layer minced clams, salt, pepper, onion juice, butter, tomato sauce, and boiled potato slices. Dredge clam layers with flour.
- 5 Pour in a cup of clam juice, add the crust, and bake for 30 minutes in a 425°F oven.
