Citrus Fruit Marmalade
Ingredients
- 1 cup sliced citrus fruit (oranges, lemons, or grapefruit)
- 3 cups water
- 1 cup sugar
Method
- 1 Slice citrus fruit thinly or grind it. Combine with 3 cups water and let stand for 24 hours.
- 2 Boil the fruit in the same water until rinds are soft. Let stand in the same water for another 24 hours.
- 3 Measure the mixture. For every cup of mixture, add 1 cup of sugar.
- 4 Boil rapidly in small batches (no more than 4 cups at a time) until set. Avoid slow boiling to prevent dark color and strong flavor.
