Citrus Fruit Marmalade

Ingredients

  • 1 cup sliced citrus fruit (oranges, lemons, or grapefruit)
  • 3 cups water
  • 1 cup sugar

Method

  1. 1 Slice citrus fruit thinly or grind it. Combine with 3 cups water and let stand for 24 hours.
  2. 2 Boil the fruit in the same water until rinds are soft. Let stand in the same water for another 24 hours.
  3. 3 Measure the mixture. For every cup of mixture, add 1 cup of sugar.
  4. 4 Boil rapidly in small batches (no more than 4 cups at a time) until set. Avoid slow boiling to prevent dark color and strong flavor.
