Citron, Ginger And Lemon Preserve

Ingredients

  • 1 lb citron
  • 1 lb sugar
  • 4 lemons
  • 0.25 lb ginger root
  • 1.5 cups water

Method

  1. 1 Pare and core the citron, then cut into strips with notched edges or fancy shapes.
  2. 2 Tie the ginger root in a cloth and boil in 1.5 cups water until flavored, then remove.
  3. 3 Add sugar and lemon juice to the ginger water; stir until dissolved and syrup is clear, removing any scum.
  4. 4 Add citron and cook until clear but firm enough to hold its shape.
  5. 5 Can and seal the preserve while hot.
