Citron, Ginger And Lemon Preserve
Ingredients
- 1 lb citron
- 1 lb sugar
- 4 lemons
- 0.25 lb ginger root
- 1.5 cups water
Method
- 1 Pare and core the citron, then cut into strips with notched edges or fancy shapes.
- 2 Tie the ginger root in a cloth and boil in 1.5 cups water until flavored, then remove.
- 3 Add sugar and lemon juice to the ginger water; stir until dissolved and syrup is clear, removing any scum.
- 4 Add citron and cook until clear but firm enough to hold its shape.
- 5 Can and seal the preserve while hot.
