Citron And Lemon Glazed Bath Buns
Ingredients
- 4 cups flour
- 1 cup milk
- ½ cup sugar
- ¼ cup butter
- ½ teaspoon salt
- ½ nutmeg, grated
- ½ compressed yeast cake
- 3 eggs, separated
- ¼ cup lukewarm water
- Citron pieces
- Sugar lumps, wet with lemon juice
- 1 egg diluted with water
- Sugar dissolved in milk
- Powdered sugar for sprinkling
Method
- 1 Mix salt, sugar, nutmeg, and flour in a large bowl. Scald milk, melt butter in it, then let cool to lukewarm.
- 2 Dissolve yeast in ¼ cup lukewarm water. Add yeast mixture, beaten egg yolks, and whites separately to the milk. Stir in flour to form a soft dough.
- 3 Knead dough on a board for 20 minutes. Cover and let rise overnight in a warm place.
- 4 Turn dough out, roll, rub with butter, and fold several times. Cut into egg-sized pieces and mold into balls.
- 5 Press a piece of citron and a sugar lump wet with lemon juice into each bun. Place on a baking tin and rise until doubled.
- 6 Brush tops with diluted egg. Bake in a moderate oven (350°F) for 30 minutes. Brush with sugar-milk mixture and glaze briefly. Sprinkle with powdered sugar.
