Citron And Apple Jelly Marmalade
Ingredients
- 1 lb citron pulp
- 1 lb 8 oz sugar
- ½ cup water
- ½ cup apple jelly
- Juice of 1 lemon
Method
- 1 Boil the citron until very tender. Remove all yellow rind, beat the white pith well in a bowl, and shred the rind.
- 2 Combine the pulp, rind, sugar, and water in a pot. Bring to a boil.
- 3 Add the citron mixture and boil rapidly until the mixture becomes clear.
- 4 Stir in the apple jelly and boil until the mixture gels properly.
- 5 Remove from heat and stir in the lemon juice. Pour into jars or glasses to set.
