Cinnamon Sugar Tea Cakes
Ingredients
- 1 pint heavy cream
- 4 heaping tablespoons granulated sugar
- 2 eggs
- A pinch of cinnamon
- Flour (as needed to roll)
- 1 egg white, beaten
- Granulated sugar for sprinkling
- Ground cinnamon for sprinkling
Method
- 1 Beat the cream, sugar, eggs, and cinnamon together until well combined.
- 2 Stir in enough flour to form a dough that can be rolled out.
- 3 Roll the dough to a quarter-inch thickness.
- 4 Brush the dough with egg white and sprinkle with a mixture of sugar and cinnamon.
- 5 Cut into rectangles about 1 inch by 3 inches.
- 6 Bake in a moderate oven (350°F) until delicately browned.
