Cinnamon Sugar Jam Pancakes

Ingredients

  • 4 oz ground rice
  • 4 eggs
  • 1 pint milk
  • Jam
  • Sifted sugar
  • Powdered cinnamon
  • Butter or oil for frying

Method

  1. 1 Make a batter by mixing the milk, eggs, and ground rice.
  2. 2 Fry thin pancakes in butter or oil until golden brown on one side.
  3. 3 Flip the pancakes and fry until brown on the other side.
  4. 4 Place a dessertspoonful (2 tsp) of jam on each pancake.
  5. 5 Fold up the pancakes, sprinkle with sugar and cinnamon, and serve hot.
