Cinnamon Sugar Currant Jelly Pancakes
Ingredients
- 1 egg
- ¼ cup milk
- ½ cup flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- 3 tablespoons shortening
- sugar and cinnamon
- Bar-le-Duc or currant jelly
Method
- 1 Beat egg and milk together.
- 2 Add flour, salt, and baking powder; beat well to mix thoroughly.
- 3 Heat shortening in a pan and pour in enough batter to barely cover the bottom.
- 4 Cover with a hot lid and bake until ready to turn.
- 5 Slip cake onto the hot lid, invert, and return to pan to finish cooking.
- 6 Spread with sugar and cinnamon, add jelly, fold like an omelet, and serve.
