Cinnamon Sugar Currant Jelly Pancakes

Ingredients

  • 1 egg
  • ¼ cup milk
  • ½ cup flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 3 tablespoons shortening
  • sugar and cinnamon
  • Bar-le-Duc or currant jelly

Method

  1. 1 Beat egg and milk together.
  2. 2 Add flour, salt, and baking powder; beat well to mix thoroughly.
  3. 3 Heat shortening in a pan and pour in enough batter to barely cover the bottom.
  4. 4 Cover with a hot lid and bake until ready to turn.
  5. 5 Slip cake onto the hot lid, invert, and return to pan to finish cooking.
  6. 6 Spread with sugar and cinnamon, add jelly, fold like an omelet, and serve.
