Cinnamon Spiced Cream Custard

Ingredients

  • 1 pint milk
  • 1 strip lemon peel
  • 1 cinnamon stick
  • 1 pint heavy cream
  • 5 egg yolks
  • Sugar to taste
  • 1 tbsp peach water
  • 2 tsp brandy or ratafia

Method

  1. 1 Boil milk with lemon peel and cinnamon until flavored, then remove from heat.
  2. 2 Whisk egg yolks with sugar, then stir in the hot milk mixture.
  3. 3 Pour into cream and stir constantly over low heat until thickened. Do not boil.
  4. 4 Remove from heat and stir in peach water and brandy or ratafia.
