  • apples (same size)
  • sugar
  • butter
  • ground cinnamon
  • nutmeg
  • egg white
  • sugar (for glaze)

Method

  1. 1 Roll out short pie crust and cut into squares large enough to cover each apple.
  2. 2 Peel apples, remove cores, and fill the center with sugar, butter, cinnamon, and nutmeg.
  3. 3 Place an apple in the center of each crust square; wet edges with egg white and fold over, sealing points on top.
  4. 4 Pinch and flute the edges to seal well, ensuring juices do not escape.
  5. 5 Brush tops with egg and bake in a moderate oven (350°F) for 40 minutes until tender but holding shape.
  6. 6 Dust with sugar ten minutes before removing from oven to create a glaze.
