Cinnamon Cocoa Sponge Cake

Ingredients

  • 3 eggs
  • 1 ½ cups sugar
  • ½ cup cold water
  • 1 teaspoon vanilla
  • 1 ¾ cups flour
  • ¼ cup Baker's Cocoa
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon

Method

  1. 1 Beat egg yolks until light, then add water, vanilla, and sugar; beat thoroughly.
  2. 2 Sift flour with baking powder, cocoa, and cinnamon, then add to the egg mixture.
  3. 3 Fold in stiffly beaten egg whites.
  4. 4 Bake in a hot oven (425°F) for 25 to 30 minutes.
