Chutney Beef And Cress Sandwiches

Ingredients

  • 1/2 pint very rare cold roasted beef, chopped
  • 1 dash cayenne pepper
  • 1/2 teaspoon salt
  • 1 tablespoon tomato catsup
  • 1 tablespoon mango chutney
  • 2 shallots, chopped
  • 1/2 clove garlic, minced
  • 1 tablespoon olive oil
  • Thin slices brown bread, buttered
  • Cress leaves
  • Thin slices white bread, buttered

Method

  1. 1 In a bowl, combine chopped beef, cayenne, salt, catsup, chutney, shallots, garlic, and olive oil. Mix well.
  2. 2 Spread the beef mixture evenly onto thin slices of buttered brown bread.
  3. 3 Top with cress leaves, then cover with thin slices of buttered white bread.
  4. 4 Press the sandwich together firmly, then cut into crescents or triangles.
