Chutney Beef And Cress Sandwiches
Ingredients
- 1/2 pint very rare cold roasted beef, chopped
- 1 dash cayenne pepper
- 1/2 teaspoon salt
- 1 tablespoon tomato catsup
- 1 tablespoon mango chutney
- 2 shallots, chopped
- 1/2 clove garlic, minced
- 1 tablespoon olive oil
- Thin slices brown bread, buttered
- Cress leaves
- Thin slices white bread, buttered
Method
- 1 In a bowl, combine chopped beef, cayenne, salt, catsup, chutney, shallots, garlic, and olive oil. Mix well.
- 2 Spread the beef mixture evenly onto thin slices of buttered brown bread.
- 3 Top with cress leaves, then cover with thin slices of buttered white bread.
- 4 Press the sandwich together firmly, then cut into crescents or triangles.
