Chopped Butter Puff Pastry With Yolk
Ingredients
- 1 cup all-purpose flour
- 1 cup unsalted butter, chilled and divided
- 1 egg yolk
- Ice water
Method
- 1 Divide the chilled butter into three or four portions. Chop one portion into the flour.
- 2 Mix in ice water and the egg yolk to form a dough. Roll out the dough.
- 3 Place the remaining butter portions on the dough and fold the dough over them.
- 4 Roll and fold the dough several times. Chill if it becomes sticky.
