Chocolate Walnut Raisin Fudge

Ingredients

  • 2 cups sugar
  • 1 cup milk
  • 2 tbsp cocoa
  • 2 tbsp Crisco
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1/2 cup chopped English walnut meats
  • 1/2 cup sultana raisins
  • 2 tbsp cream
  • Pinch of salt

Method

  1. 1 Combine Crisco, sugar, cocoa, salt, and milk in a saucepan. Stir and bring to a boil, cooking until the mixture reaches 240°F or forms a soft ball in cold water.
  2. 2 Remove from heat. Stir in raisins, cream, nut meats, and extracts. Beat the mixture until it thickens and becomes creamy.
  3. 3 Return the mixture to the stove and heat while stirring constantly until melted. Pour into a tin greased with Crisco.
  4. 4 Allow to cool partially, then cut into neat squares.
