Chocolate Walnut Raisin Fudge
Ingredients
- 2 cups sugar
- 1 cup milk
- 2 tbsp cocoa
- 2 tbsp Crisco
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 1/2 cup chopped English walnut meats
- 1/2 cup sultana raisins
- 2 tbsp cream
- Pinch of salt
Method
- 1 Combine Crisco, sugar, cocoa, salt, and milk in a saucepan. Stir and bring to a boil, cooking until the mixture reaches 240°F or forms a soft ball in cold water.
- 2 Remove from heat. Stir in raisins, cream, nut meats, and extracts. Beat the mixture until it thickens and becomes creamy.
- 3 Return the mixture to the stove and heat while stirring constantly until melted. Pour into a tin greased with Crisco.
- 4 Allow to cool partially, then cut into neat squares.
