Chocolate Walnut Caramels
Ingredients
- 2 cups granulated sugar
- 1 ½ cups glucose (pure corn syrup)
- 2 cups cream
- 1 cup butter
- 3 or 4 squares Baker's Chocolate
- 1 ½ cups English walnut meats
- 2 teaspoonfuls vanilla extract
Method
- 1 Combine sugar, glucose, 1 cup cream, and butter in a saucepan over heat. Stir and cook until the mixture boils vigorously.
- 2 Gradually add the remaining cup of cream while maintaining a vigorous boil. Do not stop boiling during addition.
- 3 Cook until the mixture reaches 250°F on a candy thermometer, stirring gently every few minutes. Alternatively, test in cold water for a hard ball.
- 4 Remove from heat. Stir in chocolate and nuts until melted, then beat in vanilla extract.
- 5 Pour into an oiled or buttered pan to form a ¾-inch thick sheet. Let cool until nearly cold, then turn out and cut into cubes.
