  • 1 egg white
  • 1 egg white cold water
  • 1 pound confectioner's sugar
  • Vanilla extract
  • Melted chocolate
  • 1/2 English walnut per ball
  • Blanched almonds
  • Granulated sugar

Method

  1. 1 Whisk 1 egg white with an equal amount of cold water until combined.
  2. 2 Stir in 1 pound of confectioner's sugar and vanilla flavoring. Beat by hand until the mixture is fine and smooth.
  3. 3 Mold the mixture into small balls. For walnut creams, place half a walnut on each side of larger balls before molding.
  4. 4 For chocolate creams, drop the balls into melted chocolate to coat. For almond creams, cover blanched almonds with the cream, form into balls, and roll in granulated sugar.
