Chocolate Walnut And Almond Creams
Ingredients
- 1 egg white
- 1 egg white cold water
- 1 pound confectioner's sugar
- Vanilla extract
- Melted chocolate
- 1/2 English walnut per ball
- Blanched almonds
- Granulated sugar
Method
- 1 Whisk 1 egg white with an equal amount of cold water until combined.
- 2 Stir in 1 pound of confectioner's sugar and vanilla flavoring. Beat by hand until the mixture is fine and smooth.
- 3 Mold the mixture into small balls. For walnut creams, place half a walnut on each side of larger balls before molding.
- 4 For chocolate creams, drop the balls into melted chocolate to coat. For almond creams, cover blanched almonds with the cream, form into balls, and roll in granulated sugar.
