Chocolate Tofu Mousse

Ingredients

  • 1 box (3.9 ounce) instant chocolate pudding mix
  • 1 1/4 cups cold soy milk
  • 1 package (14 ounce) silken tofu

Method

  1. 1 Blend the chocolate pudding mix and cold soy milk on medium speed for about 15 seconds until very smooth.
  2. 2 Add the silken tofu and blend again. Scrape down the sides and blend until well mixed and very smooth.
  3. 3 Pour the mixture into 4 small serving dishes.
  4. 4 Place in the fridge and chill for at least 2 hours before serving.
