Chocolate Steamed Pudding
Ingredients
- 3 oz chocolate
- 1 heaping tbsp sugar
- 2 rounded tbsp flour
- ½ cup milk
- 3 egg yolks
- 4 egg whites
- 1 rounded tbsp butter
Method
- 1 Melt butter in a saucepan, stir in flour and cook for one minute without browning.
- 2 Slowly add milk and stir until smooth and slightly thickened.
- 3 Remove from heat and slowly stir into beaten egg yolks and sugar.
- 4 Mix thoroughly, add melted chocolate, stir for a few minutes, then cool.
- 5 Whip egg whites until very dry and firm, then fold into the chocolate mixture.
- 6 Pour into a buttered tin lined with greased paper, filling two-thirds full.
- 7 Place tin in a deep saucepan with simmering water covering half the tin.
- 8 Cover and simmer for 30 minutes, keeping covered the entire time.
- 9 Serve immediately on a hot dish, covering with a hot tin if transporting.
