Chocolate Squash Cake With Walnuts

Ingredients

  • 1/2 cup vegetable oil
  • 1 package dark chocolate cake mix
  • 1 teaspoon ground cinnamon
  • 3 eggs
  • 1 1/4 cups water
  • 1 cup squash, shredded or finely chopped
  • 1/4 cup chopped walnuts (optional)

Method

  1. 1 Preheat oven to 350°F. Grease and flour a 10-inch tube or bundt pan.
  2. 2 In a large bowl, combine cake mix and cinnamon. Add eggs, water, and oil. Beat with an electric mixer on medium speed for 2 minutes.
  3. 3 Fold in squash and walnuts (if using). Pour batter into the prepared pan.
  4. 4 Bake for 50 minutes to 1 hour, or until the cake springs back when lightly touched.
