Chocolate Pudding With Egg Whites
Ingredients
- 1 cup milk
- 1 ½ squares Baker's Chocolate
- Pinch of salt
- 2 level tablespoons cornstarch
- 2 egg yolks
- 6 level tablespoons sugar
- 2 teaspoons vanilla
- 5 egg whites
Method
- 1 Combine milk, chocolate, and salt in a double boiler; stir until chocolate melts.
- 2 Mix cornstarch with a small amount of cold milk, then stir into the hot milk mixture.
- 3 Cook for 12 minutes, stirring constantly until smooth.
- 4 Whisk egg yolks and sugar, then slowly pour the hot mixture over them.
- 5 Cook for 1-2 minutes more, stirring, then cool completely.
- 6 Stir in vanilla, then gently fold in stiffly beaten egg whites.
- 7 Serve in a glass dish with ladyfingers.
