Chocolate Pudding With Egg Whites

Ingredients

  • 1 cup milk
  • 1 ½ squares Baker's Chocolate
  • Pinch of salt
  • 2 level tablespoons cornstarch
  • 2 egg yolks
  • 6 level tablespoons sugar
  • 2 teaspoons vanilla
  • 5 egg whites

Method

  1. 1 Combine milk, chocolate, and salt in a double boiler; stir until chocolate melts.
  2. 2 Mix cornstarch with a small amount of cold milk, then stir into the hot milk mixture.
  3. 3 Cook for 12 minutes, stirring constantly until smooth.
  4. 4 Whisk egg yolks and sugar, then slowly pour the hot mixture over them.
  5. 5 Cook for 1-2 minutes more, stirring, then cool completely.
  6. 6 Stir in vanilla, then gently fold in stiffly beaten egg whites.
  7. 7 Serve in a glass dish with ladyfingers.
