Chocolate Praline Parfait

Ingredients

  • 5 egg yolks
  • 3 tbsp sugar syrup
  • 2 oz unsweetened chocolate, melted
  • 3 tbsp praline powder (optional)
  • 1 pint heavy cream, whipped to stiff peaks

Method

  1. 1 Beat egg yolks in a saucepan until light. Stir in sugar syrup and cook over low heat, stirring constantly, until the mixture coats the back of a spoon.
  2. 2 Remove from heat and transfer to a bowl. Stir in melted chocolate. Beat until the mixture is cool and light in texture.
  3. 3 If making praline version, fold in praline powder. Gently fold in whipped cream, ensuring no liquid drains from the cream.
  4. 4 Pack the mixture in a container surrounded by ice and salt for 4 hours until firm.
