Chocolate Praline Parfait
Ingredients
- 5 egg yolks
- 3 tbsp sugar syrup
- 2 oz unsweetened chocolate, melted
- 3 tbsp praline powder (optional)
- 1 pint heavy cream, whipped to stiff peaks
Method
- 1 Beat egg yolks in a saucepan until light. Stir in sugar syrup and cook over low heat, stirring constantly, until the mixture coats the back of a spoon.
- 2 Remove from heat and transfer to a bowl. Stir in melted chocolate. Beat until the mixture is cool and light in texture.
- 3 If making praline version, fold in praline powder. Gently fold in whipped cream, ensuring no liquid drains from the cream.
- 4 Pack the mixture in a container surrounded by ice and salt for 4 hours until firm.
