Chocolate Pecan Pralines
Ingredients
- 3 cups granulated sugar
- 1 cup cream
- 1 cup sugar (cooked to caramel)
- 2 squares Baker's Chocolate
- 3 cups pecan nut meats
- Pecan halves for decoration
Method
- 1 Stir 3 cups sugar and 1 cup cream over heat until sugar melts. Boil to soft ball stage (236°F).
- 2 Add melted or finely shaved chocolate and beat in. Pour mixture into the cup of sugar cooked to caramel.
- 3 Let mixture boil up once, then remove from heat. Add pecan nut meats and beat until mass begins to thicken.
- 4 Drop teaspoonfuls onto an oiled cloth or marble. Immediately set a pecan half on each praline.
