Chocolate Pecan Pralines

Chocolate Pecan Pralines

Ingredients

  • 3 cups granulated sugar
  • 1 cup cream
  • 1 cup sugar (cooked to caramel)
  • 2 squares Baker's Chocolate
  • 3 cups pecan nut meats
  • Pecan halves for decoration

Method

  1. 1 Stir 3 cups sugar and 1 cup cream over heat until sugar melts. Boil to soft ball stage (236°F).
  2. 2 Add melted or finely shaved chocolate and beat in. Pour mixture into the cup of sugar cooked to caramel.
  3. 3 Let mixture boil up once, then remove from heat. Add pecan nut meats and beat until mass begins to thicken.
  4. 4 Drop teaspoonfuls onto an oiled cloth or marble. Immediately set a pecan half on each praline.
