Chocolate Meringue Frosting

Ingredients

  • 1 egg white
  • 8 tablespoons powdered sugar
  • 1 square chocolate (approx. 1 oz)
  • 1/2 teaspoon vanilla extract

Method

  1. 1 In a bowl, stir the egg white and powdered sugar together until smooth. Do not whip the egg white.
  2. 2 Place the chocolate in a heatproof bowl or teacup and melt it over a saucepan of simmering water (bain-marie) until fully melted.
  3. 3 Stir the melted chocolate and vanilla into the sugar mixture until combined. Spread immediately onto cake.
