Chocolate Mashed Potato Cake With Marshmallow Icing
Ingredients
- ¼ cup shortening
- 1 cup sugar
- 2½ ounces chocolate, melted
- ½ cup mashed potatoes
- 1 egg, separated
- 3/8 cup milk
- 1¼ cups flour
- 2 teaspoons baking powder
- ½ cup chopped nuts
- ½ teaspoon vanilla extract
- ¾ cup granulated sugar
- 1/3 cup water
- 6 to 8 marshmallows
- 1 egg white
- Few drops vanilla extract
- 2 ounces unsweetened chocolate
- ½ teaspoon butter
Method
- 1 Cream shortening, then add sugar and melted chocolate.
- 2 Mix in mashed potatoes until combined.
- 3 Add egg yolk, milk, flour, and baking powder; beat well.
- 4 Fold in nuts, vanilla, and beaten egg white.
- 5 Bake in a greased shallow pan at 350°F for 25-35 minutes.
- 6 Boil sugar and water until syrup spins a thread.
- 7 Melt marshmallows in the hot syrup.
- 8 Pour syrup slowly over beaten egg white and vanilla.
- 9 Spread icing thickly over the cooled cake.
- 10 Melt chocolate with butter and spread a thin layer over the icing.
