Chocolate Maple Nut Divinity

Ingredients

  • 1 ½ cups brown sugar
  • 1 cup maple syrup
  • ½ cup glucose or pure corn syrup
  • ½ cup water
  • ¼ teaspoon salt
  • 2 egg whites
  • 1 cup chopped nut meats
  • 2 squares Baker's Chocolate, broken into pieces

Method

  1. 1 Combine brown sugar, maple syrup, glucose, and water in a saucepan. Stir over low heat until sugar dissolves, then cover and boil for 5 minutes.
  2. 2 Uncover and boil to the soft-crack stage (287°F or a hard rattle in cold water). Stir constantly during the final stage of cooking.
  3. 3 Add salt and chocolate, stirring until melted. Slowly pour the hot syrup into beaten egg whites while beating constantly.
  4. 4 Fold in chopped nuts. Pour into a pan lined with waxed paper.
  5. 5 Let set for 15 minutes, then lift out using the paper edges and cut into small squares or oblongs.
